Happy Earth Day!

What is Earth Day? Well, I found a definition from Wikipedia: "Earth Day is an annual day on April 22 on which events are held worldwide to demonstrate support for environmental protection. In 2013 the day is 43 years' old. It is now coordinated globally by the Earth Day Network, and is celebrated in more than 192 countries every year. The day focused on melting polar ice in 2007, Rock (geology) in 2008, a waterfall and marine life in 2009 to parrots in 2010, pandas in 2011 and animated flowers in 2012."

T. Colin Campbell, PhD

I love this guy! He was part of the China study and others. This is a wonderful video about his findings:

Here is an interesting article revealing why people choose to be "almost vegan." I love this quote, "Could it be that the “almost-vegan” fears such social scrutiny and seeks to avoid it? And this question begs yet another: Is it worth abandoning our values to fit in or conform or pacify the interests of other non vegans in our life when the consequences of doing so are literally a matter of life and death?"

I have chosen to tell people, "I eat a vegan diet, but am not a vegan" for the very same reasons listed in this article. Social scrutiny being #1.

Zucchini Roll Ups

I purchased The 30 Minute Vegan cookbook this past Friday. I have prepared three recipes from it this weekend. I found it on Amazon.com here.

I made the Zucchini Roll Ups not thinking they would be a mediocre appetizer. Boy was I mistaken! They were a hit. I had some ingredients left over, so I made them again last night for a friend before we went out to dinner. Again, they were loved. Look at how gourmet they look!





Guess what... they only took me 30 minutes to make Saturday night and 12 minutes Sunday night with the left over ingredients. They are super easy, delicious, nutritious and too-good-to-be-true. :)
